The creaminess of avocado, plus the tartness of lime, makes for a pie that will quickly become one of your favorites! – Pie Ingredients:: Pie Shell ((baked)), Avacado ((pureed)), Lime Juice ((fresh)), Sugar, Cornstarch, Salt, Water, Egg Yolks ((lightly beaten)), Grated Lime Peel, Meringue Ingredients:: Egg Whites, Cream of Tartar, Salt, Sugar, Make the Pie:: Puree avocado and lime juice.
; In saucepan blend: sugar, cornstarch and salt; gradually stir in water.; Stir to boil over medium heat and boil 1/2 minute.; Gradually beat half of hot mixture into Egg yolks; then return to saucepan.; Stir and boil 1 minute longer.; Remove from heat and stir in lime peel.; Blend in avocado puree.; Turn into pie shell.; Make the Meringue:: Beat 4 Egg whites (at room temperature), 1/4 teaspoon cream of tartar and 1/8 teaspoon salt until foamy.
; Continue beating, gradually adding 1/2 cup sugar, until stiff, but not dry.; Top pie with Meringue.; Bake in 350 degree (moderate) oven 10 to 15 minutes until golden brown.; – Yummy!

Pie Ingredients:
- 1 9 inch Pie Shell (baked)
- 1 Avacado (pureed)
- 1/2 Cup Lime Juice (fresh)
- 1-1/2 Cups Sugar
- 1/3 Cup Cornstarch
- 1/4 tsp Salt
- 1-1/2 Cups Water
- 4 Egg Yolks (lightly beaten)
- 1 Tbsp Grated Lime Peel
Meringue Ingredients:
- 4 Egg Whites
- 1/4 tsp Cream of Tartar
- 1/8 tsp Salt
- 1/2 Cup Sugar

Instructions
Make the Pie:
- Puree avocado and lime juice.
- In saucepan blend: sugar, cornstarch and salt; gradually stir in water.
- Stir to boil over medium heat and boil 1/2 minute.
- Gradually beat half of hot mixture into Egg yolks; then return to saucepan.
- Stir and boil 1 minute longer.
- Remove from heat and stir in lime peel.
- Blend in avocado puree.
- Turn into pie shell.
Make the Meringue:
- Beat 4 Egg whites (at room temperature), 1/4 teaspoon cream of tartar and 1/8 teaspoon salt until foamy.
- Continue beating, gradually adding 1/2 cup sugar, until stiff, but not dry.
- Top pie with Meringue.
- Bake in 350 degree (moderate) oven 10 to 15 minutes until golden brown.
