Today, May 17, is National Walnut Day! Walnuts have been around for nearly 10,000 years, and health-wise, they are great for your brain, your heart, and your bones. Their wrinkly texture makes them look like a human brain, and they are considered to be the top nut for brain health! Walnuts are packed with healthy Omega 3 fatty acids, antioxidants, vitamins, trace minerals, protein and fiber. Since they are high in healthy fats and protein, they are satiating, and a few can go a long way to help curb your appetite. Because of their slightly bitter taste, Walnuts may not be as popular to eat straight out of the package as peanuts or almonds, but hey, let’s show them some respect! You can easily incorporate them into many of your recipes. They are often used in cakes, bread, cookies, granolas, and ice cream.
Chocolate Walnut Brownies – These wonderfully rich chocolate brownies have a nutty crunch, and will be an instant hit with your family. The perfect guilty pleasure! – For the Brownies: Non-Stick Cooking Spray, Unsalted Butter, Sugar (Granulated), Eggs, Vanilla Extract (Real), All Purpose Flour, Cocoa Powder (Ground, Sweetened), Salt, Semi-sweet Chocolate Chips, Chopped Walnuts, For the Frosting: Unsalted Butter, Cocoa Powder (Unsweetened), Powdered Sugar, Whole Milk, Brownies: Place the top oven rack in the center position and pre-heat the oven to 350°F. ; Line an 8×8-inch baking pan with parchment paper and spray with non-stick cooking spray. Set aside.; Cream the butter and sugar in a large mixing bowl. ; Add the eggs and vanilla and mix until combined.; Add the flour, cocoa powder, and salt to a large bowl and stir to combine. ; Slowly add the dry ingredients to the wet until just combined. Do not over mix or the brownies will turn out “cakey”.; Stir the chocolate chips and walnuts into the batter and transfer to the prepared baking pan.
; Spread into an even layer and transfer to the pre-heated oven.; Bake for 22-26 minutes or until a toothpick inserted into the center comes out clean. The brownies will still be soft and will finish setting while they cool.; Frosting: To prepare the frosting, mix the butter with the cocoa powder and 1 cup powdered sugar.; Add in one tablespoon of milk at a time until desired consistency is reached. If necessary, add the remaining ½ cup powdered sugar to thicken.; Once cool, spread frosting on top of the brownies before slicing and serving. ; – Enjoy!

Place the top oven rack in the center position and pre-heat the oven to 350°F.
Line an 8x8-inch baking pan with parchment paper and spray with non-stick cooking spray. Set aside.
Cream the butter and sugar in a large mixing bowl.
Add the eggs and vanilla and mix until combined.
Add the flour, cocoa powder, and salt to a large bowl and stir to combine.
Slowly add the dry ingredients to the wet until just combined. Do not over mix or the brownies will turn out “cakey”.
