May celebrates several foods, including Salsa – it’s National Salsa Month! And this year (2020) Cinco de Mayo lands on Taco Tuesday! Why not whip up some fresh, homemade salsa for those tacos? It’s by far the best-tasting kind!
Ingredients
- 2 Lbs Tomatoes Fresh, divided
- 1/2 Large Jalapeno Pepper Seeded, divided
- 1/2 Large Onion White, divided
- 1/2 Cup Cilantro Fresh, divided
- 2-3 Large Garlic Cloves Peeled
- 1/2 tsp Sea Salt Coarse
- 2-3 Tbsp Lime Juice Fresh

Instructions
- Divide the tomatoes, jalapeño, onion, and cilantro equally into two groups.
- Roughly chop one group and add to a high-powered blender or food processor, along with the garlic.
- Sprinkle with sea salt and pulse until the tomatoes, jalapeño, onion, cilantro, and garlic are thoroughly combined, but not completely liquified.
- Transfer to a large, non-reactive bowl and set aside.
- Finely dice the remaining group of tomatoes, jalapeño, onion, and cilantro, and add to the bowl with the blended tomato mixture.
- Add the fresh lime juice and stir to combine.
- Taste and add additional salt and fresh lime juice, if desired.
- Can be served immediately or covered and refrigerated overnight to allow the flavors to mingle.
