Panda Express Sweet Fire Chicken
Here is a secret recipe for a popular spicy chicken dish from Panda Express. This recipe is perfect for a mid-week dinner since it is super easy to prepare.
Andrew Cherng, a young man from the Yangzhou region of China, came to the United States to pursue his American dream. With little money but a lot of heart, Andrew and his father Master Chef Ming-Tsai Cherng started the first Panda Inn restaurant in Pasadena, Calif. That was 30 years ago. They introduced the robust flavors of Mandarin and Szechuan cuisine to Southern California and became the inspiration and standard for the Panda Express restaurants that are loved across the world today.

- 1/2 Lb Frozen Chicken Nugget Pieces
- 1/3 Cup Red Bell Peppers (diced 1/2 inch x 1/2 inch)
- 1/3 Cup Onions (diced 1/2 inch x 1/2 inch)
- 1 Cup Pineapple Chunks
- 1 Tbsp Cooking Oil
- 1/3 Cup Thai Sweet Chili Sauce
- 1 Red Pepper (finely chopped)
- 1 Shallot Minced
- 1 Red Jalapeno (or other small red chili pepper) (seeded and minced)
- 1 Clove Garlic (minced)
- 1 Cup Water
- 1/2 Cup Honey
- 2 Tbsp Soy Sauce
- Bake chicken nuggets according to package instructions.
- Heat clean cooking pan and add 1 tbsp. of cooking oil.
- Add red bell peppers, onions, and pineapple chunks into the pan.
- Cook for about 2 minutes.
- Stir in sweet chili sauce and bring to a boil.
- Add chicken nugget pieces into pan.
- Mix until all ingredients are well covered.
- Combine all ingredients in a saucepan; bring to a boil.
- Simmer over moderate heat, stirring occasionally, till the sauce is thickened slightly & syrupy, about 20 minutes.
- Serve at room temp. Sauce can be refrigerated and kept for up to 1 week.
