Panera Bread Broccoli Cheese Soup (Copycat Recipe) – Here’s a recipe for Panera Bread’s Broccoli Cheese Soup that tastes just as good as the real one! – Butter ((melted)), Onion ((medium, chopped)), Flour, Butter ((melted)), Half-and-Half, Chicken Stock, Broccoli ((fresh)), Carrots ((julienned)), Nutmeg, Cheddar Cheese ((sharp, grated)), Salt and Pepper, Saute onion in butter. Set aside.; Cook melted butter and flour using a whisk over medium heat for about 4 minutes. Be sure to stir frequently.; Slowly add the half-and-half, continue stirring.; Add the chicken stock whisking all the time.; Simmer for 20 minutes.; Add the broccoli, carrots and onions.; Cook over low heat until the veggies are tender, about 20 minutes.; Add salt and pepper.; By now the soup should be thickened.; Pour in batches into blender and puree.; Return the puree to the pot and place over low heat, add the grated cheese; stir until well blended.; Stir in the nutmeg.; Serve.; – Pick up some large crusty rolls to use as a bread bowl.

- 1 Tbsp Butter (melted)
- 1/2 Onion (medium, chopped)
- 1/4 Cup Flour
- 1/4 Cup Butter (melted)
- 2 Cups Half-and-Half
- 2 Cups Chicken Stock
- 1/2 Lbs Broccoli (fresh)
- 1 Cup Carrots (julienned)
- 1/4 tsp Nutmeg
- 8 Oz Cheddar Cheese (sharp, grated)
- To Taste Salt and Pepper

Instructions
- Saute onion in butter. Set aside.
- Cook melted butter and flour using a whisk over medium heat for about 4 minutes. Be sure to stir frequently.
- Slowly add the half-and-half, continue stirring.
- Add the chicken stock whisking all the time.
- Simmer for 20 minutes.
- Add the broccoli, carrots and onions.
- Cook over low heat until the veggies are tender, about 20 minutes.
- Add salt and pepper.
- By now the soup should be thickened.
- Pour in batches into blender and puree.
- Return the puree to the pot and place over low heat, add the grated cheese; stir until well blended.
- Stir in the nutmeg.
- Serve.

Broccoli is classified in the Italica cultivar group of the species Brassica oleracea. Broccoli has large flower heads, usually green in color, arranged in a tree-like structure on branches sprouting from a thick, edible stalk. The mass of flower heads is surrounded by leaves. Broccoli most closely resembles cauliflower, which is a different cultivar group of the same species.
